Chicken & Pineapple Skewers

These Chicken & Pineapple Skewers strike the perfect balance between juicy chicken and a tropical twist. Ideal for outdoor dining with family and friends, they're quick to prepare and always a crowd-pleaser.

Ingredients

  • 500g chicken breast, cut into cubes
  • ½ fresh pineapple, cut into chunks
  • 1 red pepper, cut into large pieces
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • Juice of 1 lime
  • Salt and black pepper, to taste
  • Wooden or metal skewers

Method

  1. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent them from burning.
  2. Marinate the chicken cubes with the olive oil, soy sauce, lime juice, salt and pepper. Leave to marinate for at least 20 minutes.
  3. Thread the chicken, pineapple and red pepper onto the skewers, alternating the ingredients.
  4. Preheat your Broil King barbecue to a medium-high heat.
  5. Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is cooked through, lightly charred and the pineapple has caramelised.
  6. Serve immediately with a fresh dipping sauce or a light salad.
