Chicken & Pineapple Skewers

These Chicken & Pineapple Skewers strike the perfect balance between juicy chicken and a tropical twist. Ideal for outdoor dining with family and friends, they're quick to prepare and always a crowd-pleaser.
Ingredients
- 500g chicken breast, cut into cubes
- ½ fresh pineapple, cut into chunks
- 1 red pepper, cut into large pieces
- 2 tbsp olive oil
- 2 tbsp soy sauce
- Juice of 1 lime
- Salt and black pepper, to taste
- Wooden or metal skewers
Method
- If using wooden skewers, soak them in water for 30 minutes beforehand to prevent them from burning.
- Marinate the chicken cubes with the olive oil, soy sauce, lime juice, salt and pepper. Leave to marinate for at least 20 minutes.
- Thread the chicken, pineapple and red pepper onto the skewers, alternating the ingredients.
- Preheat your Broil King barbecue to a medium-high heat.
- Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is cooked through, lightly charred and the pineapple has caramelised.
- Serve immediately with a fresh dipping sauce or a light salad.
