Choosing the Right Cuts of Meat

While you can use a variety of cuts for rotisserie cooking, the best results are typically obtained with tightly tied, boned, or boneless cuts of meat. However, if you have cuts with bones, don’t worry – you can still achieve fantastic results by carefully balancing them on the spit to ensure easy turning.

Getting Started with Rotisserie Grilling

Using the Rear Rotisserie Burner

If your Broil King® barbecue is equipped with a rear rotisserie burner, you’re in for a treat! Here’s how to set it up for rotisserie cooking:

  1. Prepare the Grill: Remove the cooking grids and warming racks from your barbecue, creating space for the rotisserie setup.
  2. Position the Drip Pan: Centre a drip pan under the rotisserie, ensuring it will be beneath the centre of the roast.
  3. Preheat the Grill: Fire up your barbecue with the rotisserie burner on Medium-High and let it preheat for approximately 10 minutes.

Placing the Meat on the Spit Rod

  1. Secure the Forks: Slide one of the skewer forks onto the spit rod and tighten it securely.
  2. Insert the Spit Rod: Insert the spit rod lengthwise into the centre of the roast, securing it in place with the remaining fork.
  3. Tighten Both Forks: Make sure both forks are tightened securely to hold the meat in place.

Testing for Balance

  1. Loosen the Spit Balance: Begin by loosening the spit balance.
  2. Balance the Spit: Carefully lay the rod over the sink, allowing the heavier side of the roast to rotate to the bottom.
  3. Adjust the Balance: To counterbalance the weight, adjust the balance to the highest point and tighten the rod handle.
  4. Turn on the Rotisserie Motor: Insert the spit rod into the rotisserie motor and turn the motor on.
  5. Check for Smooth Rotation: Ensure that the meat turns smoothly while cooking and make balance adjustments as necessary.

Remember, never let the drip pan run dry, as it may cause a flash fire. Keep a jug of hot water handy, and when the water level gets low, carefully refill the drip pan while using an oven mitt to protect your hand from potential steam burns.

Using the Rotisserie with the Main Burners

Don’t worry if your Broil King® barbecue doesn’t have a rear rotisserie burner; you can still achieve fantastic results using the main burners! Here’s how to set it up:

  1. Prepare the Grill: Remove the cooking grids and warming racks from your barbecue.
  2. Preheat the Grill: Preheat the barbecue with all burners on Medium for approximately 10 minutes.
  3. Turn off the Centre Burner(s): For indirect cooking, turn off the centre burner(s) to create a two-zone cooking setup.
  4. Position the Drip Pan: Centre a drip pan under the rotisserie, making sure that it’s beneath the centre of the roast.
  5. Add Flavour to the Pan: Fill the drip pan to about 2.5cm from the top with water, wine, or juice, and consider adding herbs that complement the flavours.
