Recipes for a Special Father’s Day Barbecue

Father’s Day is the perfect occasion to gather with family and celebrate with an unforgettable barbecue. There’s nothing better than cooking outdoors with a special menu, packed with flavour and made on your Broil King. Today, we’re sharing easy and delicious recipes to surprise dad on his special day.


Starter: Beef Skewers with Honey Mustard Sauce

Ingredients:

✔ 500g beef, cut into cubes
✔ 1 red pepper, 1 green pepper, and 1 onion, cut into chunks
✔ 2 tbsp Dijon mustard
✔ 1 tbsp honey
✔ 1 garlic clove, finely chopped
✔ 2 tbsp olive oil
✔ Salt and pepper to taste
✔ Metal or wooden skewers (soaked in water)

Method:

1️⃣ Mix the mustard, honey, garlic, olive oil, salt, and pepper to create the marinade.
2️⃣ Marinate the beef cubes for at least 30 minutes.
3️⃣ Thread the beef onto skewers, alternating with the vegetables.
4️⃣ Cook on the barbecue over medium-high heat for 10-12 minutes, turning occasionally until the beef is cooked to your preference.

Main Course: BBQ Ribs with Honey and Garlic Glaze

Ingredients:

✔ 1 rack of pork ribs
✔ 2 tbsp coarse salt
✔ 1 tbsp black pepper
✔ 1 tbsp smoked paprika
✔ 1 tsp garlic powder
✔ ½ cup honey
✔ 2 tbsp soy sauce
✔ 1 garlic clove, finely chopped

Method:

1️⃣ Mix the salt, pepper, paprika, and garlic powder and rub it all over the ribs.
2️⃣ Cook over indirect heat on the barbecue at 140°C for 2 hours, flipping occasionally.
3️⃣ For the glaze, mix the honey, soy sauce, and garlic, and brush onto the ribs during the last 30 minutes of cooking.
4️⃣ Remove from the barbecue and let rest for 10 minutes before slicing.

Dessert: Caramelised Pineapple with Cinnamon and Rum

Ingredients:

✔ 1 ripe pineapple, sliced into rounds
✔ 2 tbsp honey
✔ 1 tsp cinnamon
✔ 1 tbsp rum (optional)
✔ Vanilla ice cream (for serving)

Method:

1️⃣ Mix the honey, cinnamon, and rum in a bowl.
2️⃣ Brush the pineapple slices with the mixture and place them on the barbecue over medium heat.
3️⃣ Grill for 2-3 minutes per side, until caramelised and grill marks appear.
4️⃣ Serve with vanilla ice cream and enjoy!

Ingredients:

✔ 4 lemons, halved
✔ 1 litre cold water
✔ 3 tbsp honey or sugar
✔ Ice to taste
✔ Fresh mint leaves for garnish

Method:

1️⃣ Grill the lemons on the barbecue over medium heat for 2-3 minutes, until caramelised.
2️⃣ Squeeze the juice and mix it with water and honey or sugar.
3️⃣ Serve over ice and garnish with mint.
