Barbecue spiced chicken with a side of corn

Ingredients

8 chicken drumsticks
Extra virgin olive oil to drizzle
4 corn cobs
Chili oil
Lime wedges
Cos lettuce wedges

Spice rub:

2 tbsp sea salt flakes
1 tbsp smoked paprika
1 tbsp ground coriander
1 tsp chilli powder
1 tsp ground black pepper
1⁄2 tsp ground cloves
1⁄2 tsp ground allspice

Instructions

  1. Preheat your barbecue with the lid closed using medium heat. Meanwhile, prepare the spice rub by combining all the ingredients in a container and shaking them together. Any extra spice mix can be stored for up to 6 months in a sealed container.
  2. Begin by brushing the chicken with olive oil and then evenly applying 2 tablespoons of the spice rub. Next, place both the chicken and corn on the barbecue. Grill for 15-20 minutes, turning occasionally, until the chicken is thoroughly cooked, and the corn develops a slight blistering. Once done, remove them from the barbecue.
  3. To finish, drizzle a bit of chili oil over the chicken and serve it alongside the grilled corn, lime wedges, and fresh cos lettuce.
