Cod with Banana Salsa

Ingredients

1kg Cod

For the marinade:

3 tbsp white, balsamic vinegar

2 tbsp olive oil

1 tsp toasted sesame oil

2 tbsp fresh, chopped chives

Salt and pepper to taste

For the banana salsa:

2 bananas, chopped

1 jalapeño pepper, minced

3 tbsp minced red onion

1 red pepper, roasted, peeled and chopped

2 tbsp fresh cilantro

2 tsp honey

A pinch of salt

Juice of 1 lime

Instructions

  1. Mix the ingredients for the marinade and pour it onto a flat, glass dish.
  2. Add the fish to the marinade and let it sit for 30 minutes at room temperature.
  3. In the meantime, mix together the ingredients for the banana salsa mixture and let it stand at room temperature.
  4. Fire up your Broil King® grill and set it to 232°C.
  5. Oil the grids and put the cod on the grill, with the flesh side down.
  6. Cook the fish for 5 minutes with the lid closed.
  7. After 5 minutes, flip the fish over and cook for another 5 minutes.
  8. Take the fish off the grill by putting your spatula between the flesh and the skin.
  9. Serve with the banana salsa et voila!
