Red piri piri prawns

Ingredients

16 whole carabinero or king prawns

Piri Piri sauce:

4 whole red chillies or 8 birds eye chillies (seeds removed)
3 cloves of garlic, finely chopped
1 tsp dried chilli flakes
1 tsp smoked sweet paprika
1 tsp salt
1 tsp of finely chopped oregano
1 tsp of finely chopped thyme
4 tbsp of extra virgin olive oil
4 tbsp of lemon juice

Instructions

  1. To prepare the Piri-Piri sauce, use a blender or food processor to blend all the ingredients into a paste. If you prefer a thinner sauce, you can add more olive oil.
  2. For an enhanced flavour, store the sauce in the fridge overnight to allow the ingredients to melt together and intensify the taste.
  3. Approximately 2 hours before cooking the prawns, generously coat them with the sauce and let them marinate in the fridge.
  4. Grill the marinated prawns on a hot barbecue, cooking for 4 minutes on each side.
  5. After grilling, season the prawns with sea salt and serve them with lemon wedges. For extra flavour, offer some additional sauce on the side.
